Chocolate caramel tartelette


a tartelette with a creamy dark chocolate ganache, a soft caramel cream and a pinch of sea salt as decoration, a true taste explosion!

maybe a weird combination, sea salt in a sweet pastry … ?! but the salt is so well matched with the sweetness of the caramel and something bitter of the dark chocolate, it tastes really great!

Ingredients:

cocoa tartelette
100g flour
1tbsp cocoa
20g icing sugar
60g butter
1 egg yolk
1tbsp water

caramel
150g sugar
60ml water
60ml whipped cream
35g butter
a pinch of sea salt

chocolate ganache
100g dark chocolade
50ml whipped cream
sea salt

tartelette:
mix all the ingredients together. Let the dough rest for 1 hour in the fridge and fill the tartelette molds. Bake at 170C for about 15 min. and leave to cool

caramel:
melt the sugar till you get a golden brown caramel, add the whipped cream, butter and a pinch of sea salt, and pour this over the baked tartelettes

chocolate ganache:
heat the whipped cream, pour over the chocolate and stir till you get a nice, shiny ganache. Pour over the caramel and sprinkle the tartelettes with some sea salt

  1. Mijn karamel is keihard geworden 😦 amper door te bijten en plakkend aan je tanden.. was dat de bedoeling? Ik heb het recept precies gevolgd!

      1. Ja had ze echt allebei toegevoegd.. Ik had al wat gegoogeld en had gevonden dat het door de room en boter zacht zou moeten blijven, dus begon al aan mezelf te twijfelen, maar ik weet het echt zeker haha. Heel jammer, maar misschien toch net wat fout gedaan dan! Ik ga het later gewoon nog eens proberen 🙂
