Lavender pralines

this beautiful pralines look like jewels ❤

white chocolate filled with a lavender cream and decorated with lavender sugar on top!


lavender ganache
100ml whipped cream
1 tsp honey
2 tbsp dried lavender
1 (bio) lemon
150g white chocolate
purple colour

lavender sugar
1 tbsp sugar
1 tbsp dried lavender
purple colour

lavender ganache:
heat the whipped cream, honey, dried lavender and lemon zest. Cover the pan and let infuse it for 15min. Heat the mixture again and pour it through a sieve, over the chocolate and stir well. Add some blue/red colour, till you get a nice light purple ganache colour. Leave to cool for about 2 hours

lavender sugar:
mash the sugar, dried lavender and some purple colour. Till you get a nice colored lavender sugar

temper the white chocolate, put into a piping bag and pipe very small circles, sprinkle half of the circles with the lavender sugar (that is the top of the praline) and leave to cool

fill the pralines with the lavender cream ❤
