Raspberry tartelette

chocolate tartelette
90g flour
10g cocoa
35g butter
35g icing sugar
1/2 egg
a pinch of salt

forest fruits cremeux
60g forest fruits
1/2 egg
1/2 gelatin leaf
8g sugar
8g butter
6g forest fruit tea
60g water

creme chiboust
1 egg yolk
8g cornstarch
85g milk
8g butter
1/2 gelatin leaf
13g water
40g sugar
20g egg white

mix all the ingredients together. Let the dough rest for 1 hour in the fridge and fill the tartelette molds. Bake at 170C for about 15 min. and leave to cool

forest fruits cremeux:
heat the water, add the forest fruit tea, cover the pan and let infuse it for 1 hour. Pour this through a sieve, add the forest fruit puree and sugar. Stir the egg and add it to the puree, heat it till 84C and add the (pre soaked) gelatine, cool till 40C and add the butter. Divide the cremeux over the tartlettes

creme chiboust:
boil the milk, stir the egg yolks with the sugar and cornstarch and add this to the milk, boil it on a low heat until the mixture starts to thicken, add the (pre) soaked gelatin, cool til 50C and add the butter. Boil the water and sugar till 121C, mix the egg white and add the sugar syrup, mix till you get a nice meringue, and add this to the creme
